Caja China Pig Roast

A pig roast party is always a hit with guests. This package includes a whole pig roasted on site, services of 2 staff members (Chef and helper) for 6-8 hours. Pig will be marinated in our famous mojo sauce for 24 -36 hours prior to the event. Caja china will be set on site, fire started and pig will roast for 4-6 hours depending on the size. Fire cannot be left unattended, therefore staff will need access for those 6-8 hours on site. Space for catering van, work table and a 10"x10" tent (which we provide) will be required. Roast will generate smoke and heat, so keep in mind when selecting site. Once pig roast is ready, Chef will carve the pig and serve the guests.
